CLASS 1 - This quality product is made in Italy from natural collagen, not a synthetic material. To rehydrate them we recommend a quick dip in wine to wet both the inner and outer skin and fill. As with any dehydrated product the more the skin is in contact with liquid the softer they will become and will be more susceptible to breakage. Ø38x 20mt approx. 20kg of meat (class 1 indicates made from 1st class natural ingredients, product has no odour)

Dehydrated Cacciatore Casings - Ø38mm x 25m 

This is a CLASS 1 product - This quality product is made in Italy from natural collagen which has been dehydrated. The casings are made from no synthetic material.

Dehydrated casings are preffered to fresh hog casings as they are shelf stable, do not require soaking or cleaning, they are uniform in shape, have no smell, and are much stronger. 

  • Ø38mm x 25 meters holds approx. 20kg of meat
  • Netting is not required for this size of casing.

 

Directions for use:

Pull out a required length from the roll and cut into individual portions, and tie off one end.

To rehydrate the collagen casing, a quick dip in wine for a few seconds is all that is required (or water), to wet both the inner and outer skin.

Fill as you would your regular salami or cacciatore.

*We highly recommend only to wet the casings with liquid for a few seconds, even if there are a few dry bits, the moisture from the meat will hydrate as required. With any dehydrated product, the more the skin is in contact with liquid the softer they will become, and will be more susceptible to breakage.
