La Chitarra 'guitar in Italian', describes this piece of equipment that originated in the central Abruzzo region. 

La Chitarra is used by placing each sheet of fresh pasta on the wires, and press the sheet through the wires with a rolling pin to cut it.

The Chitarra gives pasta a unique texture which allows sauce to better stick to the pasta, as well it gives the pasta a unique mouthfeel.

The chitarra is double sided offering two varieties of pasta, traditional spaghetti and fettuccini.

For best results, make your sheet of pasta slightly thicker, 2-3mm for a more traditional sqaure cut. 

La Chitarra per Pasta

La Chitarra 'guitar; in Italian, describes this piece of equipment that originated in the central Abruzzo region. The Abruzzese have been using La Chitarra since the 1800's to produce fresh pasta.

La Chitarra is used by placing each sheet of fresh pasta on the wires, a rolling pin is then pushed over the top, forcing the pasta sheet through the wires, which cut the pasta perfectly. If any of the pasta is left hanging on to the guitar, a simple strum across the wires with a finger helps to loosen them.

The Chitarra gives pasta a unique texture which allows sauce to better stick to the pasta, as well it gives the pasta a unique mouthfeel. For the most traditional method, make your sheet of pasta slightly thicker - 2-3mm - for a more traditional sqaure cut. 

The chitarra is double sided, offering two varieties of pasta, traditional spaghetti and fettuccini.
