Prosciutto, Pancetta & Capocollo Class

Learn to make classic Prosciutto, Pancetta & Capocollo!

During the class we will cover various processes such as defining cuts of meat, sorting and mincing, which spices and seasoning, mixing and curing your smallgoods.

We will teach and demonstrate the process of the making Prosciutto and Pancetta, how to prepare the meat and curing, and the equipment required.

You will experience hands on making own capcollo, to then take home, cure and enjoy.

At the end of the class we will be sampling our efforts with a glass or two of wine, fresh sausages, cheese and meats, and of course, laughs and good company!

Class description

  • Demonstration in making Prosciutto and Pancetta
  • Get hands on making your own capcollo, to then take home, cure and share
  • The secrets to curing small goods
  • Classes start at 6pm and run until approximately 9pm.
  • Cost is $185.00 per person. This includes your meat and spices, equipment to use on the night, spuntino, and you get to take home your efforts.
  • You will also be given a recipe booklet to take home for future reference.
  • Max 12 people per class
  • Classes are held in our demonstration kitchen at our store in Preston.

For private classes, please enquire with us directly. Private classes will require a minimum of 8 participants to run.
