Salumi Knife
The perfect knife for cutting salami, and slices of capocollo and pancetta. Allows more consistent thickness when slicing thanks to the wide straight edge of the blade, which makes long cuts through the meat, while the length of the balde allows less 'back and forward' slicing.
Especially useful when hand slicing cured cuts of meat like capocollo and pancetta.

About the company, Coltellerie Paolucci:
The Company ‘Coltellerie Paolucci’ was founded in 1972, but their routes go back much further, with the Paolucci family opening up their metal working shops in 1791 in Frosolone, Italy.
