The "Sushi Line" knives have special 4199 Nitrogenio B stainless steel blades with high carbon content. A rigorous heat treatment of the blades guarantees high hardness and uniform microperforation, essential for obtaining a vigorous and lasting blade edge. Respecting the oriental tradition, the sharpening is done on one side only. This characteristic, combined with the high quality of the steel, the heat treatment and the particular care in the finishing process, allows to obtain a clean cut, to enhance the quality of the cooked products. The handles in POM for food are perfectly balanced with the blade.
