Bactoferm T-SPX Starter Culture - 25g

The culture is added to the sausage mix prior to stuffing the casings. Starter cultures are used to convert sugars to lactic acid in fermented sausages. T-SPX enhances the aromatic flavor and appearance of fermented meats. Also assists in moisture removal and the breaking down of Nitrate into Nitrite for more efficient curing.

Starter cultures are used to balance PH levels, provide a tangy flavour, control growth of friendly bacteria and to speed up the fermentation process. 

Use for products needing at least one month's time for drying and do not ferment with this product over 24 C. •

  • Fermentation instructions: approx. 72 hours at 20 ° C, or descending from 22 ° C to 18 ° C over 5 days. Fermentation and drying procedures should be adapted to the specific requirements of the cure.
  • Store in the freezer, but short interruptions of the cooling cycle will not affect quality. Shelf life 6 weeks at refrigerator temperature.
  • Freeze Dried Culture Contents: Dextrose, starter culture
