These commercial pizzella irons are produced for bakeries, restaurants and pastry shops that need daily production of pizzelle to be sold. Simple and practical.
We only import Italian made pizzella irons, they have uncoated aluminium cooking plates. Aluminium cooking plates will build a seasoning from the cooking oil with use, and become more non-stick over time. We do not import teflon coated irons, as the teflon chips off and doesn't last over time.
Directions for use:
Preheat iron for 25 - 30 minutes prior to cooking. After 30 minutes oil the top and bottom plate using a brush and olive oil. Ensuring the oil enters the grooves on the plate. This process must be carried out each time you turn on your iron, reapply oil if the pastry begins to stick.
Never wet or wash the cooking surface. The plates will season in time. Cleaning the plates will result in damage to the iron and may cause permanent sticking.
Add your mixture in the centre of the cooking plate. Hold the handles closed for approximately 2 seconds then release. (It is important not to hold handles closed for the duration of cooking). Remove the pizzella from the iron once the desired colouration is reached.
Allow the iron to cool completely before storing. Wipe with a dry paper towel.
