Master the art of gluten free pizza making at Costante Imports with the talented Francesco, owner of Roccella in East Melbourne, where Francesco and his team make 3 doughs every single day: gluten free, sourdough and charcoal. Francesco is an acclaimed Italian pizza chef, and since arriving in Australia has established Zero95, Six Slices Pizza Bar, Express Pizza and Pasta, and Meno Zero Gelato!

Francesco will guide you through the entire process of crafting the perfect gluten free pizza, from making and kneading the dough to choosing the right toppings and cooking it to perfection. Everyone will then each take a turn to create, cook and eat their own pizza!

With Francesco's expert guidance and years of knowledge, you'll not only gain the skills to make incredible gluten free pizza dough, but also learn the science behind the perfect crust, sauce, and toppings.

Class Description

  • Learn the difference between types of flours
  • Understand the importance of the fermentation process
  • Mixing the gluten pizza dough
  • How to stretch dough
  • All about pizza toppings
  • What tools you need
  • The different methods to cook pizza – including using the Ooni Pizza Oven
  • Hands on:
    • Stretching your own pizza dough
    • Topping and cooking your own pizza
    • At the end of the class, we will all get sit and enjoy the pizza we cooked.
    • Take home some dough to cook for your family and friends!
  • The class includes a recipe book, though a notepad and pen are always a good idea to bring along!
  • You can bring your favourite apron, otherwise we can provide one to you.

About Francesco:

Francesco (commonly called Ciccio) was born in Catania Sicily and raised by a family of restauranteurs. Growing up in the busy kitchen environment is where his love of pizza was born. He first began working in a family friends’ pizzeria at age 14, running deliveries and by 16 he was in the kitchen full time. At 23, he was leading the team as the Head Chef at Beato Te Milano one of the biggest hospitality venues in Milan.

A love of travel and the excitement of new opportunities lead him to Australia with his wife, where he continued his journey in the kitchen, bringing his passion and expertise.

After the success of his first Melbourne venue, Zero95, where the restaurant won the title for best pizza in the world and placed in the top 5 pizzerias in Victoria, his experience and talents continued to grow. He not only had a drive to create the best pizza but also found great enjoyment in sharing his passion through teaching others.

After he established multiple hospitality venues across Melbourne, including Zero95, Six Slices pizza bar, Express Pizza and Pasta, Meno Zero gelato and dessert bar, Ciccio began a new venture in 2019 at Roccella in East Melbourne, an all-day Italian restaurant, which combines Ciccio’s love of pizza and Italian food with an inviting space where everyone is welcome; much like the Italian culture of accommodating guests as if they are family.
